Use a very large crockpot for this soup, the vegetables and liquid need room to expand. Simple and delicious, just chop everything and put in the slow cooker.

Use a very large crockpot for this soup, the vegetables and liquid need room to expand. Simple and delicious, just chop everything and put in the slow cooker.

Ingredients
- 2 cups lentils
- 2 cups chopped onion
- 2 tablespoons canola oil
- 3 stalks celery chopped
- 1 parsnip chopped
- 4 carrots peeled and diced
- ½ cup fresh parsley chopped or 2 teaspoons dried, additional chopped parsley as garnish
- 1 15 ounce can diced tomatoes
- 1 bay leaf
- 8 cups water
- 2 teaspoons salt
- ½ teaspoon pepper
- ½ teaspoon dried thyme
Instructions

Place all ingredients in a crock pot.

Cook on low for 8 – 10 hours or on high for 6 hours.

Stir thoroughly before serving.

Top with chopped parsley.
