Use a very large crockpot for this soup, the vegetables and liquid need room to expand. Simple and delicious, just chop everything and put in the slow cooker.

Ingredients

  • 2 cups lentils
  • 2 cups chopped onion
  • 2 tablespoons canola oil
  • 3 stalks celery chopped
  • 1 parsnip chopped
  • 4 carrots peeled and diced
  • ½ cup fresh parsley chopped or 2 teaspoons dried, additional chopped parsley as garnish
  • 1 15 ounce can diced tomatoes
  • 1 bay leaf
  • 8 cups water
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ½ teaspoon dried thyme

Instructions

  • Place all ingredients in a crock pot.
  • Cook on low for 8 – 10 hours or on high for 6 hours.
  • Stir thoroughly before serving.
  • Top with chopped parsley.
